Recipe: Banana bread three ways

I love banana bread, it tastes amazing, smells incredible and it's super easy to make. It's become even more of a hit while we've been in lockdown, taking over Instagram feeds globally, but I like to play with the recipe now and again, so now you can too:

  1. Classic banana bread

  2. Banana bread muffins with a Nutella centre

  3. Chocolate marble banana bread

Ingredients: Banana bread

100g softened butter

175g caster sugar

2 eggs

2-3 ripe bananas, mashed (brown bananas are the best for this!)

225g self-raising flour

1 teaspoon baking powder

2 tablespoons milk

Option 2: Banana bread muffins with Nutella centre

Jar Nutella (approx 12 teaspoons)

Option 3: Chocolate marble banana bread

50g cocoa powder


Method:

  1. Preheat oven to 180C fan and line a loaf tin with baking paper

  2. Mix together the butter and sugar until fluffy

  3. Add the eggs one by one, mixing between each

  4. Add in the flour and baking powder and mix until combined

  5. Mix in the mashed bananas until just combined. Add in the milk if needed

  6. Pour into the tin and level

  7. Bake for 50-60 mins

Option 2: Banana bread muffins with Nutella centre

  1. Preheat the oven to 180C fan and line a 12-hole muffin tin with cases

  2. Follow steps 2-5 above

  3. Once the batter is ready, spoon a tablespoon into each muffin case, then add a teaspoon of Nutella on top. Top with the remaining batter and bake as above

Option 3: Chocolate marble banana bread

  1. Preheat oven to 180C fan and line a loaf tin with baking paper

  2. Follow steps 2-5 above

  3. Once the batter is ready pour a third of it into a separate bowl and mix in the cocoa powder. Add a little mix to loosen the batter if needed

  4. Spoon both the batters to the tin, alternating between each. Once all is added, gently swirl a knife through the batter

  5. Bake as above
